Beets.

At the moment I am having a little love affair with Beetroot. I am eating it with everything in a multitude of ways. Its bloody hue, so eager to stain every thing a rich magenta, gorgeously contrasts against its green leaves and is one of nature's most wonderful dyes. Its flavour is sweet, fresh and delicious and the beet has a substantial amount of health benefits.



Beetroot is an anti-oxidant, boosts the number of white blood cells, is rich in amino acids and is a great source of folic acid, vitamins A and C, fibre, manganese and potassium!
Basically, this beautiful vegetable that I adore so much helps repair your body tissues, helps your body produce more blood and reduce blood pressure, battle abnormal cells, boost immunity and your general energy levels will be up as a result of all its goodness!
Beetroot is also incredibly alkaline, which helps to normalise your pH levels and results in a very long list of benefits!
Even the leaves are edible and are full of iron, just prepare the same way you would spinach!
Now, that is what I call a Superfood!
